The Karnif is a big cat that comes in many subspecies, variations and shapes all across both sides of Atreia. And all of them have one thing in common: They are considered pests and a huge danger for the regional inhabitants, killing livestock, keeping prey animals away and their aggressive nature makes them lose all shyness and go for humans and Daeva alike. So what do you do with such an animal? Well, deal with it like one does with a lot of pests: Eat it! Though caution of what cat to consume, as predators they might bare sickness
The protein rich meats taste is described as being like lean Porgus - a domesticated pig. Others say it is the finest wild game meat they ever had, mild in taste, meaty and dense though a bland enough flavor, it can absorb any seasoning quite well.
In this recipe, we will focus on making a rich, meaty Karnif Gravy. For this, you either take the legs or in this case, the neck of the animal.
Remove the meat of the neck, so you are left with only with the non meaty parts of the neck and cook the neck for about one and a half to 2 hrs. The meat itself will be roasted and all its dripping fats and remains of the meats crust and caramelized bits will be kept. Now get the stock of the cooked neck and give it to the cooking trey. Boil, scrap and reduce. Now cut the neck meat parts in fine bits and give them to the gravy. Let them simmer with the rest of the heat and done.
A very simple gravy, that surely can be improved upon.
